Shapeshifter — Little Saison
Wine Barrel Aged • Earthy • Mango • Coconut • White Pepper • 5.5% abv
Pours a hazy straw color with a thin head. The initial aroma is white grape, mango and coconut shell. As the beer warms, you’ll find biscuit, bread and earthy aromas come out. The first sip gives a spritzy mouthfeel, slight acidity and a dry finish. You’ll discover flavors of mango, lychee, kiwi, white pepper and clove.
The beer has a great mouthfeel and slight acidity and is very dry. It tastes like a saison, a wit, and an earthy low abv farmhouse were all mixed together and made this beer. It is hard to classify, but it has many styles mixed into it. For me, it is a success from what we wanted to make to what it came out as.
Shine — Farmhouse Ale with Peaches
Wine Barrel Aged w/ Fruit • Dry • Young Peach • Light Body • 5.4% abv
This tart wild ale showcases the art of blending barrel aged and fresh beer. The barrel aged portion began with Texas grown pilsner malt, water from Vista’s aquifer-fed well, house-aged hops and Brettanomyces, set to age in a local wine barrel.
The freshly brewed ale also fermented with Brettanomyces and over 200 pounds of juicy peaches. Marrying the two together creates a delicate, tart and nuanced ale with subtle stone fruit aroma, pleasant tartness and flavors of peach cobbler and light tannins.
Fireside-Whiskey Barrel Aged Imperial Stout
Cocoa • Molasses • Marshmallow • 11.2% abv
This rich winter brew pours black as night with aromas of cocoa powder, pecan, marshmallow and whiskey. The first sip evokes s’mores, followed full bodied dark chocolate and a whiskey finish.
