They’ve worked hard to connect and collaborate with talented partners who can extend and grow their ambitious destination brewery concept in Driftwood, Texas.


Josh Watterson


Josh is a unique combination of artist, scientist and strategist.  He was most recently Head Brewer at Brasserie St. James, where he built a library of over 200 wine barrel aged beers and achieved critical acclaim, including the Great American Beer Festival’s Brewmaster of the Year.

From brewing a pristine kolsch, to a delicately fruited lambic, to the most awarded saison in the world, Josh is recognized as one of the top brewmasters in the United States.


Andrew Stiver


Andrew believes it is his responsibility to showcase each ingredient in the most creative way by blending classic and modern techniques to create memorable and beautiful dishes.

Working closely with our brewing team, Andrew will have every resource to pair a seasonal food experience.  Soon, he’ll be serving up dishes sourced from local, sustainable ingredients and prepared with zero waste.

Much more than a CMS Advanced Sommelier, Nathan Prater brings a unique and interesting background to his chosen profession as a Beverage and Service leader and teacher. Nathan’s skills and creativity have produced some of the city’s most memorable food and beverage paired dining events.
