On Saturday, August 11, we will release four variations of our guest-favorite Rosanna Barrel-Aged Brett Ale, each aged in a different single varietal, freshly-emptied red wine barrel. The base beer, made with American Pilsner Malt, Unmalted Wheat, German Sterling and, our house-aged whole cone hops, our limestone-filtered well water, was fermented and aged on a strain of Brettanomyces known as Lambicus, often found in traditional lambics. This strain produces a slight cherry-pie-like aroma and flavor and lots of earthy Brett. We then aged the brew in Aglianico, Tannat, Petite Sirah and Tempranillo barrels from our friends at Bending Branch Winery in Comfort, TX. Half of these were blended to create Rosanna, which pours with a pale rose-hue this ale has aromas and flavors of pear, stone fruit, and leather. The other half of the batch we saved for this special horizontal family release.
Chef Stiver sources vegetables and herbs from our own onsite “beyond organic” farm, honey from our 16-hive apiary and only the freshest and most sustainably raised proteins, cheeses and grains from neighboring purveyors. The menu for this dinner will be released a few days prior, after we harvest for the week.

* Note: We have only 100 bottles (750ml) of each varietal available for tasting and purchase. Bottles to go are limited to two bottles of each varietal per person (total of 8 bottles) and are first come, first serve.
