We’re bringing the same “fresh air, fresh beer” feel of our original Driftwood ranch location to Bee Cave, including an open air live music series, Live on the Lawn.  We have nine Vista beers on draft, local wines & ciders, picnic-style farm-to-table snacks and Vista merchandise.
We are located in the Hill Country Galleria, right on the Galleria’s Central Plaza (in the old Ginger Man space).  Outdoor seating is available on our patio or in the plaza (NO INDOOR SEATING). We are adhering to all local guidelines and COVID-19 safety precautions, including ensuring tables are placed at a six-feet minimum distance, providing hand sanitizer and requiring guests to wear face masks when not seated and maintain social distancing.

Hye — Texas Wild Ale

Savory / Apple / Honeysuckle / 6.9% abv

Hye is a savory and dry ale created with 100% wild yeast found in the freshly-dumped William Chris zinfandel barrels where it aged for over 12 months. The wild yeast and time in barrel gives flavors of white grape, honeysuckle and peach with a lingering tannic and funky finish.

Hye is an ongoing collaboration started in summer of 2019 with William Chris Vineyards, located down the road in Hye, TX. Our goal is to find wild Texas yeasts from Hill Country vineyards we can isolate and brew with Texas grains and age in Texas wine barrels.

Shapeshifter — Little Saison

Collaboration with Funkwerks
Earthy / White Grape / Mango / Pepper / 3.8% abv

We joined forces with one of our favorite Colorado breweries, Funkwerks, to brew this “little saison”, a style-defying ale with the funkiness of saisons we love, without adding brettanomyces. Our two brewmasters Pat and Gordon — longtime friends — were up to the challenge. They started with a unique grain bill: pilsner malt, malted wheat and acidulated malt, along with raw spelt berries from our neighbors at Barton Springs Mill added for mouthfeel and a slight haze.

Classic Tettnang & Hersbrucker hops, along with Vista’s mineral- rich well water, were the perfect compliment for a wild Texas saccharomyces strain. Our friends at Community Cultures isolated this yeast from a prickly pear cactus in Big Bend Park in West Texas. The result is like a saison, a wit and an earthy farmhouse in one, all at an easy-drinking 3.8%.

Pours a hazy straw color with a thin head. The initial aroma is white grape, mango and coconut shell. As the beer warms, you’ll find biscuit, bread and earthy aromas come out. The first sip gives a spritzy mouthfeel, slight acidity and a dry finish. You’ll discover flavors of mango, lychee, kiwi, white pepper and clove.

Middle Trinity — Belgian-Style Tripel

This Belgian-style, strong golden ale is our tribute to the Trappist monks and to Vista’s pure, limestone filtered water from the Middle Trinity aquifer. Pours with a faint haze and a snow-white head. Floral and mellow spiciness and clean vanilla malty notes make way for traditional banana and clove.

Laissez Faire — Wine Barrel-Aged Brett Ale

Tart / Red Grape / Mineral / 7.4% abv

Full-bodied with a beautiful pink hue. Big fruit notes of red grape, berry and apple with a slight acidity and minerality. Brett forward with beautiful vanilla and tannins from the red wine barrels.

This beer began with Vista’s aquifer filtered well water, house-aged hops and 100% Texas-grown grains: two-row pilsner malt and wheat from Blacklands Malt. It spent 12 months in freshly-emptied, 100% Touriga Nacional red wine barrels from our neighbors Lewis Wines with a Brettanomyces Trois yeast strain.  Laissez Faire is a French phrase meaning “let things take their own course, without interfering.” We proudly take that approach in our barrel program.

Desert Skies — Sotol Barrel-Aged Farmhouse Ale

The second release in our Desert Skies series, where we team up with our Driftwood neighbors Desert Door Texas Sotol to explore ageing beer in the freshly emptied barrels of this unique spirit.

Our house Le Saison transforms into an even more complex beer over a year spent in the sotol barrel, which adds layers of botanical, vanilla and bourbon-like notes.  The flavors of both the mixed-culture saison and the sotol have married and concentrated, yielding a beer that is smooth, even at 8.9% abv.

Cuvée Cerise — Mixed Culture Wild Ale with Tart Cherries

Cherry / Blackberry / Leather / 7.8% abv

The aroma and flavor are first and foremost cherry, then warming to blackberry, leather and tobacco. Tart and dry with a vinous finish.  This small-batch blend began with two of Vista’s most popular beers: Laissez Faire Brett Ale and our house mixed culture saison. After three months in stainless, the blend was racked into local wine barrels with star of the show: a heavy  dose of tart red cherries. The mixed cultures refermenting on cherries, along with a subtle layer of tannin and wood character, creates a unique synergy of beer and fruit fermentations. The result is a vibrant crimson blend of fruit and earthy Brett that is greater than the sum of its parts.

Oenobeer Series: Hye - Texas Wild Ale with Picpoul Blanc

We’ve created a series of unique barrel-aged beers, each pairing a single cask of beer with a single varietal of freshly pressed Texas wine grape juice.  We add the juice to our existing aged beer in barrel within 24 hours of harvest, and then allow the yeast and microflora from both the beer and the grape juice to co-ferment in the barrel for about 12 months. A truly unique Texas product, created with Texas grains, Vista’s well water and Texas-grown grape juice.

Oenobeer Series: Glen Rose — Lambic-Style Ale with Roussanne

Glen Rose has a blend of six cultures which produces a mildly tart ale.  The Roussanne juice in this version of the oenobeer is from William Chris Vineyards La Pradera Vineyard, Texas High Plains. Deep amber color with aromas of white grape, pineapple, kiwi. Dry & sour with subtle minerality.

Oenobeer Series: Travis — Brett Ale with Cabernet Sauvignon

Travis began as a delicate, mildly tart single-strain Brett ale. The Cabernet Sauvignon juice is from Lewis Wines, Tallent Vineyards, Mason County, TX.   Rich crimson color with aromas of red grape, plum, and blackberry. Sour & dry with cherry, leather, vanilla.

Bourbon Barrel-Aged Middle Trinity Tripel

We’ve transformed our original Belgian-style Tripel through almost a year in freshly-dumped Ghost Hill Bourbon barrels from our neighbors Treaty Oak.

Over the course of the seasons, the variations in temperature allowed the beer to expand and contract in barrel, which concentrated the vanilla and honey-like flavors. This time also softened the alcohol and infused fresh bourbon undertones. The result is a remarkably smooth, big beer with all of the vanilla, floral, and spicy notes of Middle Trinity married with toffee, caramel, vanilla and of course, bourbon.

Lorenzo — Mexican Hot Chocolate Imperial Stout

We took inspiration from traditional South-of-the-border hot chocolate, combining the dark chocolate malt base with Ceylon cinnamon, Madagascar vanilla beans and touch of heat and smoke from guajillo and ancho chili peppers.  We’re honoring Lorenzo de Zavala, who dedicated his life to fighting oppression and building democracy. He helped author both the first Mexican and first Republic of Texas constitutions, and was the first Vice President of Texas!

Flanders Fields — Oude Bruin

This barrel aged sour brown ale is our Texas tribute to a traditional style of the Flemish region of Belgium. We began with Texas grown pilsner, munich and chocolate malts. Vista’s well water and house-aged hops mingle nicely with a strain of  Brettanomyces isolated from a small Belgian brewery. Fifteen months in a neutral oak give us a balanced sour brown ale which pays tribute to the style.

Named in honor of the poem by John McCrae written as a tribute to fallen soldiers on WWI.
